If the Blanc de Blanc is a study in elegance, the Blanc de Noir is a statement of power. Made from Pinot Noir grown on the estate's 30-year-old West Tamar vineyard, this is a sparkling wine that defies expectations — and deliberately so. Anthony Woollams had every intention of blending his Chardonnay and Pinot Noir into a single cuvée, but when the time came, each had developed such singular character that keeping them apart was the only honest choice.

Pinot Noir from two clones was hand plunged and cold soaked for 24 hours before pressing to a medium rosé colour. Wild fermented in 500-litre puncheons, the barrels were then topped with aged reserve Chardonnay for maturation before natural malolactic fermentation in spring. By the time the wine was tiraged in early 2022, the rosé hue had evolved to a deep, burnished old gold — known in the trade as partridge eye. After 26 months on lees, it was disgorged in March 2024 with zero dosage, making this a rare and uncompromising "sauvage" style that relies entirely on the wine's own texture and richness for balance.

The result is unlike almost anything else in Australian sparkling wine. Wild plum, bitter orange, wild flower honey and vanilla toffee swirl through a palate driven by a vigorous, explosive mousse and anchored by a firm tannin structure. This is not an aperitif — it is a sparkling wine built for the table, for food, and for those who want something genuinely out of the ordinary.
