West Tamar, Tasmania — Traditional Method

This is a wine fifteen years in the making. The oldest components in this cuvée date back to 2009, when founder Anthony Woollams foot-pressed a tiny parcel of Chardonnay from White Hills in the Upper Tamar, fermented it in an old barrel and set it aside in magnums — with the quiet conviction that one day it would find its place in a sparkling wine of his own. That day has arrived, and a little of that extraordinary reserve wine finds its way into every bottle.

Predominantly from the 2021 vintage, the base wines were wild fermented in 500-litre French oak puncheons before undergoing natural malolactic fermentation. Only the lightly pressed cuvée portion was selected for bottling, tiraged in early 2022 and left to mature for over two years on lees before disgorgement in April 2024 with a delicate dosage of 4g/L. Each bottle is individually numbered.

On the nose, the wine is vibrantly aromatic — bright lemon and lime citrus with the subtle richness that only genuine aged reserve wines can provide. The palate is at once fresh and mouth-filling, with a fine, persistent mousse and creamy texture that carries the wine to a long, refined finish. This is Tasmanian sparkling at its most considered and complete.
