Wild fermented in 500-litre puncheons, the barrels were then topped with aged reserve Chardonnay for maturation before natural malolactic fermentation in spring. By the time the wine was tiraged in early 2022, the rosé hue had evolved to a deep, burnished old gold — known in the trade as partridge eye.
