The oldest components in this cuvée date back to 2009, when founder Anthony Woollams foot-pressed a tiny parcel of Chardonnay from White Hills in the Upper Tamar, fermented it in an old barrel and set it aside in magnums — with the quiet conviction that one day it would find its place in a sparkling wine of his own. Only the lightly pressed cuvée portion was selected for bottling, tiraged in early 2022 and left to mature for over two years on lees before disgorgement in April 2024 with a delicate dosage of 4g\/L. Made from Pinot Noir grown on the estate's 30-year-old West Tamar vineyard, this is a sparkling wine that defies expectations — and deliberately so. Anthony Woollams had every intention of blending his Chardonnay and Pinot Noir into a single cuvée, but when the time came, each had developed such singular character that keeping them apart was the only honest choice.\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan\u003e\u003cbr\u003e\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan\u003ePinot Noir from two clones was hand plunged and cold soaked for 24 hours before pressing to a medium rosé colour. Wild fermented in 500-litre puncheons, the barrels were then topped with aged reserve Chardonnay for maturation before natural malolactic fermentation in spring. By the time the wine was tiraged in early 2022, the rosé hue had evolved to a deep, burnished old gold — known in the trade as partridge eye. After 26 months on lees, it was disgorged in March 2024 with zero dosage, making this a rare and uncompromising \"sauvage\" style that relies entirely on the wine's own texture and richness for balance.\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan\u003e\u003cbr\u003e\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan\u003eThe result is unlike almost anything else in Australian sparkling wine.
